CHEESY WALNUT FETTUCCINE image

Number Of Ingredients 11

One 10 oz package frozen cut broccoli or cauliflower
3 oz fettuccine or spaghetti
1 T butter
1 1/2 t all-purpose flour
1 1/2 t snipped fresh basil or 1/2 t dried basil, crushed
Dash garlic powder
3/4 C milk or light cream
2/3 C cream-style cottage cheese
1/4 C grated parmesan cheese
1/4 C chopped walnuts
1 T butter

Steps:

  • In a medium saucepan cook the broccoli or cauliflower according to package directions; drain. Cook the pasta according to the package directions; drain. Meanwhile, for sauce, in medium saucepan melt 1 T butter. Stir in flour, basil, and garlic powder. Add milk or light cream all at once. Cook and stir till thickened and bubbly. Cook and stir for 1 minute more. Remove from heat; stir in the cottage cheese and the parmesan cheese. Add the broccoli and walnuts; heath through, stirring occasionally. Toss the cooked pasta with 1 T butter. Spoon the vegetable sauce over pasta. Toss to coat pasta.
