Cheesy Vegetable Soup image

This recipe is one my stepmom, Barb, made while we were both trying to lose weight in Scotland. Since we both went to Weight Watchers there, I think she got it from one of the other ladies at a meeting. It is so darn good, you won't know it is lower calorie!

Number Of Ingredients 5

32 oz california blend frozen vegetables
3 small cans fat free chicken broth
1 can(s) rotel tomatoes
16 oz sliced frozen carrots (or more california blend)
10 oz lite velveeta

Steps:

  • 1. Simmer frozen vegetables in broth 30 min until tender. It will boil. Remove from heat and add Velveeta cubes. If you don't remove from heat, it will curdle.
  • 2. You can increase the vegetables for no extra calories.
