3 c rigatoni pasta, uncooked
3 Tbsp butter
1/4 c diced red onion
1/2 c chopped carrots
2 (10.75 ounce) cans condensed cream of chicken soup
3/4 c cubed cream cheese
2 c shredded extra sharp cheddar cheese
1 c shredded pizza cheese blend
1 c crumbled blue cheese
1 (8 ounce) can whole kernel corn,drained
3 c sliced leftover pork loin
1 tsp sea salt
1 tsp seasoned pepper
1/2 c dry bread crumbs

Steps:

  • 1. Fill a large pot with lightly salted water and bring to a rolling boil over high heat.Once the water is boiling,stir in rigatoni pasta,and return to a boil.Cook the pasta uncovered,stirring occasionally,until the pasta have cooked through,but are still firm to the bite,about 5 minutes.Drain well in a colander set in the sink.
  • 2. Preheat oven to 350 degrees F.Spray a 9x13-inch baking dish with cooking spray.
  • 3. Melt the butter in a skillet over medium heat.Stir in onion and carrots;cook and stir until the onion has softened and turned translucent,about 5 minutes.Stir in noodles,cream of chicken soup,cheeses,corn,sliced pork loin,then season with sea salt and seasoned pepper.Transfer mixture into the prepared baking dish.Sprinkle bread crumbs on top.
  • 4. Bake in the preheated oven for 30 to 35 minutes,or until bubbly.
