Cheesy Ham & Pesto Stuffed Chicken~Robynne image

My family loves breaded chicken dishes,and how can you go wrong with cheese, ham and pesto in a flavorful breading? Trust me! You can't! I was so happy with this chicken that I had my neighbor try it and she LOVED it! Thanks, Melanie! Disclaimer: I have always used recipes as a guide and use my instincts and experience to alter or omit ingredients as I cook. 4 - chicken breast, pounded to 1/4" thickness
3 cup(s) swiss cheese, grated
12-16 slice(s) deli ham
4-6 teaspoon(s) prepared pesto
1/4 teaspoon(s) garlic salt
- olive oil, extra virgin
COATING
1/2 cup(s) panko bread crumbs
1/4 cup(s) italian bread crumbs
1/4 cup(s) corn starch
1/4 cup(s) instant potato flakes, dry (really...trust me)
1/4 cup(s) parmesan cheese, grated
1 teaspoon(s) italian seasoning

Steps:

  • Sprinkle chicken breasts with garlic salt. Place 3 or 4 slices of ham on each breast. Spread 1-2 teaspoons of pesto over ham and top with Swiss cheese. Fold chicken in half like a book. Set aside.
  • To make coating combine all ingredients and mix thoroughly. Carefully coat chicken with, being sure not to lose any of the yummy stuffing. Heat oven to 300 degrees.
  • In a large skillet, heat olive oil on medium heat and saute chicken on each side until nicely brown. Don't worry if all the cheese is not melted. Transfer chicken to a baking sheet and bake for 15-20 minutes or until cheese is melted and chicken is cooked through.
