~ Cheesy Green Chile Egg Breakfast ~ Low Carb image

A recipe that I came up with, as I continue my low carb way of life! I wanted something with a little bite to it...savory and something easy and satisfying any time of the day! My family even loves them. Add your favorite spices, I just added salt and some red pepper flakes for added heat. Make it your own!

Number Of Ingredients 7

1 - 10 ounce(s) can, whole chiles chopped or already chopped chiles
6 large eggs
1/2 - onion, chopped small
2 tablespoon(s) red bell pepper, chopped
Salt - and pepper to taste
Red - pepper flakes to taste - optional
8 ounce(s) fresh shredded colby jack cheese

Steps:

  • Preheat oven to 325 degree F. Spray a 9 inch dish with non stick cooking spray. In a bowl, beat eggs, add red pepper, seasonings, onion. Spread chilies on bottom of dish.
  • Pour egg mixture over chilies.
  • Sprinkle evenly with cheese.
  • Bake 25 - 30 minutes or until egg is puffed around the edges and cooked in center.
  • Cut and serve with salsa! Add more salt if needed.
