Cheesy Enchilada Bake image

I adopted this orphan recipe. I like it very much and think you will too.

1 lb lean ground beef
1 bell pepper, chopped
3 garlic cloves, minced
16 oz black beans, rinsed and drained
16 oz tomato sauce
16 oz stewed tomatoes, mexican
1 c picante sauce
1 tsp cumin
1/2 tsp garlic salt
8 tortillas, corn
1/2 c red onion, finely chopped
1/2 c olives
1 c cheddar cheese, shredded
1/4 tsp onion powder
1/4 tsp garlic powder
lettuce, shredded
low fat sour cream
tomatoes, chopped fresh

Steps:

  • 1. Brown meat with pepper, onion and garlic; drain. Add beans, tomato sauce, stewed tomatoes, picante sauce, cumin, garlic salt, garlic powder and onion powder. Simmer 15 minutes.
  • 2. Top with tortillas. Top with half the remaining meat mixture; sprinkle with cheese and olives. Repeat layers (except for cheese). Cover tightly with aluminum foil. Bake at 350 for 20 minutes. Remove foil and top with remaining cheese. Bake uncovered for 5 minutes. Top with lettuce, tomato, sour cream and additional picante sauce.
