CHEESY CHILI DIP image

Number Of Ingredients 9

1 (10 oz) can tomatoes & green chilis
1 (4 oz) can chopped green chilis
1 T cornstarch or flour
1 medium onion, diced
1 cove garlic, minced
1/2 t salt
1/2 t pepper
1/4 t crushed red pepper
1 c diced Colby cheese

Steps:

  • Drain tomatoes and chilis, reserving the liquid and combining it with flour n a 1-qt saucepan. Cook over medium heat, stirring constantly, until thickened. Stir in all other ingredients except cheese and cook until onion is tender Stir in cheese and cook over low heat until melted. Serve warm with tortilla chips and have lots of cold beer on hand.
