This Cheesy Chicken Skillet Chili, thick with vegetables and beans and topped with sour cream and shredded cheese, is a quick and easy weeknight dish.

1 lb. ground chicken
1/2 cup sliced fresh mushrooms
1/2 cup sliced carrots
1 can (14-1/2 oz.) diced tomatoes, undrained
1 can (15 oz.) kidney beans, rinsed
1/4 cup TACO BELL® Thick & Chunky Salsa
2 tsp. chili powder
1/4 tsp. garlic powder
1 cup KRAFT Pizza Shredded Four Cheese, divided
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Cook chicken in large nonstick saucepan on medium heat 6 to 8 min. or until done, stirring frequently. Add mushrooms and carrots; cook 3 min. or until carrots are crisp-tender, stirring occasionally.
  • Add next 5 ingredients; stir. Cook 5 min. or until heated through, stirring occasionally. Add 3/4 cup cheese; cook and stir 2 to 3 min. or until melted.
  • Serve topped with sour cream and remaining cheese.
