Cheese Sauce - Quick and Easy image

A smooth creamy cheese sauce thats great over vegetables specially when serving Fish or Chicken. you can make it ahead and heat up slowly in the microwave which is so handy

50 g butter
375 ml milk
35 g flour, plain
1/2 teaspoon mustard, dried
70 g cheese, mature cheddar, grated

Steps:

  • Melt butter in pan and add the flour with some of the milk, so that its a paste. Add the remainder of the milk and all of the grated cheese, return to the heat and gradually bring to the boil, stirring constantly.
  • A non stick saucepan is good - or you can actually microwave it on medium or less, still stirring as much as possible to stop lumps . add a little salt if needed.
  • you can reheat in the microwave if necessary.
