CHEDDAR CORN CASSEROLE image

1 stick melted butter
1 large onion, chopped
1 small green pepper, chopped
1 small red pepper, chopped
3 eggs
1 cup Sour Cream
1 can (15 oz.) cream-style corn
1/3 cup yellow corn meal
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded Cheddar Cheese

Steps:

  • Heat oven to 350*. In medium skillet, heat 2 tablespoons butter over medium heat. Add onion and peppers; cook until tender. Remove from heat. In large bowl, combine remaining melted butter, eggs and sour cream. Whisk together until smooth. Stir in corn, corn meal, salt and pepper. Stir in cheese and onion mixture. Pour into buttered 2-quart casserole. Bake 45 minutes or until center is set.
