CAULIFLOWER/KALE TABOULI image

Number Of Ingredients 9

• 1 small head cauliflower
• 1 large bunch kale
• 1 large shallot, minced
• Juice from 1 lemon
• 1/4 cup olive oil (or equivalent measure to lemon juice)
• 1 clove garlic, minced
• 1 large sprig parsley finely chopped
• Cherry tomatoes, quartered (optional)
• Salt and pepper

Steps:

  • Remove core from cauliflower and break into florets. Grate to resemble couscous/bulgur. Remove tough center stems and finely chop kale. Whisk remaining ingredients in large bowl. Add cauliflower and kale and mix thoroughly. Add salt and pepper to taste. Add cherry tomatoes to garnish.
