CAST IRON IRISH SODA BREAD image

4C flour
3 TBS sugar
1 tsp baking soda
1 tsp salt
2 C raisins ( 1C each dark and golden)
2C buttermilk
1 large egg, lightly beaten

Steps:

  • grease the pan generously with Crisco or vegetable shortening Combine flour,sugar,baking soda, and salt in a bowl. Whisk gently to blend. Stir in raisins to coat with the flour mixture. Make a well in the center and add the buttermilk and egg: stir until stiff dough is formed. Mix with floured hands. Remove dough and mound it into the prepared skillet. Form a round loaf. Lightly moisten hands with water to smooth the top. Use a serrated knife dipped in flour and score the top with and X-1/2" deep. Bake 1 hour.
