CASHEW CARAMEL BARS image

Shortbread base:
1½ cups (375 mL) all-purpose flour
¾ cup (175 mL) brown sugar
¼ tsp (1 mL) kosher salt
½ cup (125 mL) cold butter, cut into bits
Topping:
12 oz (300 g) can mixed nuts (mostly cashews, no peanuts)
1 cup (250 mL) butterscotch chips
½ cup (125 mL) light corn syrup
2 tbsp (30 mL) butter

Steps:

  • 1. Combine flour, sugar and salt. Cut in butter until mixture is crumbly. Pat into a 9×13-inch (3 L) baking dish lined with parchment paper. Bake in a preheated 350F (180C) for 15 minutes until lightly browned. 2. Sprinkle shortbread base with nuts. 3. Melt butterscotch chips with corn syrup over gentle heat. Stir in butter until melted and smooth. Drizzle over nuts. Bake 10 minutes longer. 4. Cool. Remove from pan and cut into bars.
