CARROT-CAULIFLOWER MEDLEY image

Number Of Ingredients 7

3 medium carrots, thinly sliced (about 1 1/2 cups)
1 1/2 cups small cauliflowerets (about 1/2 pound)
2 Tablespoons unsalted butter
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
fresh parsley, chopped (about 1/4 cup)
freshly grated parmesan cheese (about 1/4 cup)

Steps:

  • Place the carrots, cauliflower, butter, salt and nutmeg in a 1 quart microwaveable casserole dish. Cover tightly. (Can be made ahead to this point and chilled for up to 1 day.) Microwave on high for 4 minutes; stir. Cover and microwave until the vegetables are crisp-tender, 2-4 minutes longer. Let stand covered 5 minutes. Sprinkle with the parsley and cheese.
