Carrot Bread image

Deliciously moist quick bread. Not too sweet.

Number Of Ingredients 10

1 1/2 c flour
1/2 tsp salt
1 tsp baking soda
1/2 tsp nutmeg
1 tsp cinnamon
1/4 tsp ground cloves
2 eggs
1 c carrot purée
1/2 c honey
1/2 c olive oil

Steps:

  • 1. Preheat oven to 360°F. Grease loaf pan.
  • 2. Sift together dry ingredients. In separate bowl beat eggs, then stir in remaining wet ingredients. Combine with dry ingredients, taking care not to mix too much!
  • 3. Bake 50 minutes, or until tester comes out clean. Cool 10 minutes on rack, then turn out of pan to cool completely.
