CAROB STRAWBERRY BANANA BREAD image

Number Of Ingredients 17

1 cup packed brown sugar or sugar in the raw (or cane sugar, fructose, or Splenda)
3 tbsp safflower (or vegetable) oil
4 tbsp unsweetened applesauce
2 large egg whites
1 tbsp ground flaxseed (soaking in 3 tbsp water for a few minutes)
3 or 4 large mashed over-ripe bananas (depending on how moist and sweet you want the bread)
1 cup regular oats
1/2 cup fat free milk or soy milk
1 cup all purpose flour
1 cup whole wheat flour
1/4 cup miller's bran
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
10 oz. carob chips
1/2 cup strawberries (cut into small pieces)

Steps:

  • Preheat oven to 350 Mix first 5 ingredients in a large bowl. Using a mixer, beat at a medium speed. Mix bananas, oats, and milk seperately. Then add to sugar mixture. Beat well. Combine flours, bran, baking powder, baking soda, salt, and cinnamon in a medium bowl. Add to sugar mixture and stir until just combined. Fold in Strawberries and Carob chips. Coat a 9X 5 loaf pan with cooking spray and spoon batter into it. Bake at 350 for an hour and 15 minutes, or until a toothpick inserted in center comes out clean (with the exception of melted chocolate on in). Cool in pan for 30 minutes and then let cool completely on wire rack. Cooks note: I mash 3 bananas and cut up the fourth, so there are small pieces of banana in the bread. You can also vary this recipe by omiting the strawberries and carob chips, adding walnuts or pecans, adding blueberries, raspberries, or peach slices, etc.
