Care Bear's Peanut Butter Balls image

This is a favorite of my daughter. The recipe comes from a Care Bear's video that she loves and I actually remember the episode from when I was a child. Super simple and delicious - this makes a great quick breakfast or healthy afternoon snack.

1 cup granola cereal (any kind you like)
1 cup powdered milk (a 1-qt pouch equals one cup)
1/2 cup brown sugar (packed)
1/2 cup raisins (optional)
1 (16 ounce) jar peanut butter (chunky or smooth)
sesame seeds, mini-chocolate chips, shredded coconut, roasted sunflower seeds

Steps:

  • Mix granola, powdered milk, brown sugar and raisins (if using) until well-combined. Mixture should be white and chunky.
  • Stir in peanut butter, mix well. This must be done by hand - using a wooden spoon will make it easier to combine.
  • Once the ingredients are well incorporated, refrigerate the mixture for at least an hour. Otherwise it will be too sticky to roll.
  • After at least an hour, roll the mixture into walnut-sized balls (approx 1 tblsp.). Roll in one or more of the following: sesame seeds, mini-chocolate chips, shredded coconut or roasted sunflower seeds.
  • Place balls on a cookie sheet in the refrigerator to firm up for at least 4-6 hours. After that you can store them in an airtight container (in the fridge.) These will keep for weeks (if they last that long!).
