1/4 C WATER
2 C WHOLE MILK
5 EGG YOLKS
2 T LIGHT CORN SYRUP
1/2 TSP VANILLA

Steps:

  • IN MEDIUM SAUCE PANY OVER MEDIUM LOW HEAT, COMBINE SUGAR AND WATER. ONCE SUGAR DISSOLVES COMPLETELY (5 MIN) INCREASE HEAT TO HIGH AND BOIL UNTIL MIXTURE TURNS DEEP AMBER, BRUSHING DOWN THE SIDES WITH WET PASTRY BRUSH AND SWIRLING AS NEEDED. WARM MILK IN MICROWAVE AND GENTLY ADD TO CARAMEL MIXTURE. MIXTURE WILL BUBBLE VIGOROUSLY - REDUCE HEAT TO MEDIUM LOW AND STIR UNTIL ALL OF THE CARAMEL BITS DISSOLVE. IN BOWL, WHISK EGGS WITH CORN SYRUP UNTIL BLENDED. GRADUALLY ADD HOT CARAMEL MIXTURE, WHISKING CONSTANTLY. RETURN MIXTURE TO SAUCE PAN AND COOK OVER MEDIUM LOW HEAT UNTIL CUSTARD THICKENS. STRAIN INTO BOWL AND REFRIGERATE UNTIL COLD. ADD VANILLA AND PROCESS IN AN ICE CREAM MAKER.
