I adapted this recipe from The Cooking Photographer's "Caramel Stuffed Apple Cider Cookies." (http://www.thecookingphotographer.com/2009/11/caramel-stuffed-apple-cider-cookies.html) I don't like Kraft caramels, so I made the homemade caramel found at http://www.giverslog.com/?p=3168 to drizzle over the cookies. Amazing fall...

Steps:
- 1. Preheat oven to 350 degrees.
- 2. Cream butter, sugars, salt, and the 10 packets of apple cider mix until fluffy. Beat in eggs and vanilla extract. In a separate bowl, mix baking soda, baking powder, cinnamon and flour. Add to butter mixture and stir until combined.
- 3. Using a small cookie scoop, drop 1 1/2 inches apart onto ungreased baking sheets. Bake 10-12 minutes, rotating baking sheets halfway through baking time. Allow to cool on the pan for 5 minutes before removing to cooling racks.
- 4. Drizzle with melted caramel. (I make my own using the recipe at http://www.giverslog.com/?p=3168. I cook it as directed to the caramel apple dipping stage.)
