Candied Yams ( Crock Pot) image

I must admit, I have never tried these. I am not a sweet potato, or yams fan; but I shared this recipe with a good friend, and she swears by them. She won't use any other recipe..this recipe came from my " The Best Slow Cooker Cookbook Ever".. I know a crock pot comes in handy when preparing big holiday dinners, and is why I am...

Time 5h45m

Number Of Ingredients 10

3 1/2 to 4 lb yams, peeled and cut into 1 inch cubes
3/4 c packed dark brown sugar
4 Tbsp butter, melted
1 1/2 tsp ground cinnamon
1/4 tsp grated or ground nutmeg
2 Tbsp fresh orange juice
3 Tbsp brandy, she omits, says they are great without
1 1/2 tsp orange zest
1 c miniature marshmallows
1/2 c toasted pecans, she said candied pecans is what she uses

Steps:

  • 1. Place the yams in crock pot. In a medium bowl, mix together the brown sugar, melted butter, cinnamon, nutmeg, and orange juice. Spoon over yams.
  • 2. Cover and cook on the low heat setting 5 1/2 to 6 hours, stirring once, if possible, until the yams are tender.
  • 3. Stir in brandy and orange zest. Sprinkle the marshmallows and pecans over the top. Cover and cook 5 minutes longer, or until the marshmallows are melted. Serve immediately..
  • 4. Notes from the book: These yams are a yummy addition to holiday meals. Use yams with a vivid sweet orange flesh, because they cook up to a much moister texture than pale sweet potatoes, which can end up dry and crumbly.
