Cake That Won't Last image

I don't know where my mom got this recipe, but I have been enjoying it for years.

Number Of Ingredients 11

3 1/2 c all purpose flour
3 eggs
1 tsp baking soda
1 tsp salt
1 1/2 tsp vanilla extract
2 c diced banana
3 c sugar
1 tsp cinnamon
1 c vegetable oil
1 can(s) 8 0z can crushed pineapple
1/2 c chopped pecans (optional)

Steps:

  • 1. Beat the 3 eggs and mix with other ingredients in this order: flour, sugar, salt, soda, cinnamon, vanilla, oil, banana, pineapple, nuts.
  • 2. Do not beat; mix by hand. Just stir till well blended.
  • 3. Bak in 9X13 pan for 40 minutes at 350. Check if its done. May need another 5 minutes. Glaze with mix of powdered sugar, milk and vanilla
