CAJUN CHICKEN SALAD image

1/4 cup Dijon mustard
3 Tbsp. olive oil
2 Tbsp. dry white wine
2 Tbsp. honey
1 small head Boston lettuce
3 medium plum tomatoes thinly sliced
1 small onion thinly sliced
1-2 tsp. cayenne pepper
1 1/2 tsp. paprika
1 tsp. pepper
1/2 tsp. chili powder
1/2 tsp. garlic powder
1/2 tsp. salt
2 chicken breasts

Steps:

  • Whisk mustard, 2 Tbsp. oil, white wine and honey together for dressing. Season with salt and pepper. Let stand at room temperature. Toss lettuce, tomatoes and onion together in medium bowl. Divide salad between 2 plates. Combine cayenne pepper, paprika, pepper, chili powder, garlic powder and salt. Rub on chicken. Saute until done. Cool and slice. Mix with salad and dressing.
