BUTTERY BAKED SALMON image

This is my own quick and easy recipe for a very moist, buttery baked salmon. It is lightly flavored with Old Bay seasoning, a touch of lemon and garlic and herbs. Don't shy away from trying this because of the amount of butter used. Most of the butter remains in the pan. I serve it with a baked potato, romaine salad and cheddar chive biscuits. Simply delicious. Also, there is almost no clean-up!

- cooking spray or oil for pan
4 tablespoon(s) salted butter
3/4 teaspoon(s) old bay seasoning
3/4 teaspoon(s) garlic and herb seasoning
1/2 teaspoon(s) lemon juice
1/4 teaspoon(s) fine sea salt
- freshly ground black pepper to taste
4 - 6-8 ounce portions fresh salmon, skinless & boneless
- fresh chives, parsley, lemon slices for garnish, if desired

Steps:

  • Preheat oven to 425ºF.
  • Line a rimmed baking sheet with aluminum foil; lightly coat with cooking oil spray or oil; set aside.
  • Put butter in a small microwave-safe bowl or cup; place in microwave and heat just until melted, about 20-30 seconds on high power.
  • Stir in Old Bay, garlic & herb seasoning, lemon juice and sea salt; set aside.
  • Place salmon portions on prepared baking sheet.
  • Spoon or pour melted butter mixture over salmon, turning each piece to evenly coat with the butter.
  • Sprinkle each with a grind of black pepper, if desired (recommended.)
  • Place on middle rack of preheated oven; bake at 425ºF for approximately 11-13 minutes, until no longer dark pink in the center and flakes easily. Do not overcook.
  • Remove to warm serving plate; spoon a little of the buttery juice over each, if desired (recommended.)
  • Garnish as desired. Serve immediately. Cover and refrigerate leftovers.
