Buttery Apple Pound Cake image

This could easily become a favorite in your family like it is in mine. I love to make recipes using apples, especially in the fall when they are fresh. This cake also travels well, whether you are taking it to work or the office and take along copies of the recipe to give out.

2 cup(s) butter, softened
2 cup(s) sugar
3 large eggs
3 cup(s) sifted cake flour
1 teaspoon(s) salt
1 teaspoon(s) baking soda
3 teaspoon(s) vanilla flavoring
3 large apples, granny smith, pared cored and chopped into small pieces
1 cup(s) chopped pecans

Steps:

  • Combine softened butter, sugar and eggs. Beat for 3 minutes at medium speed until well blended. Sift together the flour, salt and baking soda. Add to the butter mixture. Add vanilla flavoring. Fold in apples and pecans. Bake in prepared tube pan for one hour and 20 minutes at 325 degrees. After 5 minutes, remove cake to a cooling rack.
