Butternut Squash Quinoa image

High in protein - low in calories this is a great main or side!

Number Of Ingredients 14

3 cup(s) butternut squash cubed
- olive oil
- salt and pepper
2 cup(s) chicken broth
1/2 cup(s) onion
1 tablespoon(s) olive oil
2 cup(s) mushrooms sliced
1 tablespoon(s) garlic minced
1 cup(s) quinoa (we used red and white)
1 tablespoon(s) thyme, leaves
1 tablespoon(s) sage leaves, fresh
1/2 cup(s) peas frozen
1/4 cup(s) parmesan cheese
2 tablespoon(s) walnuts chopped

Steps:

  • Preheat oven to 425F toss squash. Place in oven for 25 minutes stiring every ten minuts untill tender. Set aside.
  • Toast quinoa in a sauce pan, add onions, garlic and broth cook for 15 minutes.
  • Add mushrooms peas, thyme and sage cook for an additional 5 minutes
  • Garnish with walnuts and cheese
