Butternut Squash Casserole image

My favorite aunt used to make this for family potluck dinners. We would go to Grandma's almost every Sunday night and each family brought a couple of dishes. What great food!

Number Of Ingredients 10

3 c cooked and mashed butternut squash
2 Tbsp butter
1 Tbsp brown sugar
1/4 tsp salt
6 c peeled, chopped apples
1/4 c sugar
1 1/2 c crushed corn flakes
1/2 c chopped walnuts or pecans
1/2 c brown sugar, firmly packed
2 Tbsp butter

Steps:

  • 1. Preheat oven to 350 degrees. Combine first four ingredients, stirring well, and set aside.
  • 2. Melt 1 T of the butter in a large skillet; add apples and sugar. Cover and simmer 8-10 minutes or until tender. Drain off excess liquid. Stir apples into squash mixture. Spoon into lightly greased 2 quart casserole dish.
  • 3. Combing remaining ingredients, stirring well. Sprinkle over squash mixture. Bake at 350F for 20 minutes.
