CHEESE GRITS WITH CORN, ONION & HERBS image

Number Of Ingredients 11

Scraped kernels from 2 ears fresh sweet corn (about 1 cup)
1 Vidalia onion
•1 qt. whole milk
•1 c grits
•1 t. Salt
•1/2 t white pepper
•1/4 c unsallted butter
•1 egg
•3/4 cup grated Parmigiano-Reggiano cheese (about 3 ounces) plus more grot topping
•1 tablespoon chopped fresh flat-leaf parsley
•1 tablespoon chopped fresh chives

Steps:

  • In a heavy-bottomed saucepan, heat the oil over medium heat. Add the onion grated in box cutter and cook, stirring, until transparent, about 2 minutes. Add the corn and cook, stirring occasionally, until the kernels become soft, about 5 minutes. Set aside. Bring milk to a boil over med. heat, stirring often. add 1/2 c butter and grits. cook, stirring constantly, until mixture is the consistency of oatmeal, about 5 min. remove grits from heat. Add salt, pepper, and egg, beating until well combined. add 1/3 c butter and gruyere cheese and onion & corn mixture. Pour into a greased 2 qt. casserole dish. sprinkle with parmesan cheese. bake 350 1 hour.
