Buttermilk Pecan Chicken image

This is DELICIOUS! This recipe halves nicely. Now that all the kids are out of the house I can make as little as 1 large breast for my husband and I. So, feed 2 or feed a small army with is recipe.

1/3 c butter or margarine, melted
1 c all purpose flour
1 c pecans, crushed
1/4 c sesame seeds
1 Tbsp paprika
1 1/2 tsp salt
1/8 tsp pepper
1 egg, slightly beaten
1 c buttermilk
8 chicken breast halves, skinned
1/4 c pecans, coarsely chopped

Steps:

  • 1. Melt butter in a 13x9 pan. Set aside. Combine flour and next 5 ingredients. Mix egg and buttermilk together.
  • 2. Dip chicken in egg and buttermilk mixture and dredge in flour mixture, coating well.
  • 3. Place In baking dish turning once to coat with butter. Sprinkle with pecans.
  • 4. Bake chicken at 350° for 30 minutes or until done.
