BUTTERMILK MASHED POTATOES WITH CARMELIZED SHALLOTS image

Number Of Ingredients 7

5lb white or yukon gold potatoes, peeled and cut into 2 inch chunks
Kosher salt and pepper
3/4 c buttermilk warmed
1/4 c heavy cream warmed
1/4 t ground nutmeg
5 medium shallots
1T olive oil

Steps:

  • Put potatoes into large pot and cover w/cold water. Bring to boil and add 2 1/2 T salt. Reduce heat and simmer 15". Peel and thinly slice shallots. Saute in 1T oil, stirring occasionally until golden brown, about 15". Drain potatoes and return to pot. Add butter, milk/cream, nutmeg, 1/2t salt, and 3/4t pepper. Mash with handmasher; fold in shallots. Transfer to prewarmed bowl.
