Steps:
- 1. Preheat oven to 200C. Sieve flour, baking powder and baking soda into a large mixing bowl. Add salt and mix well. 2. Cut softened butter into smaller pieces and add them into the dry ingredients. Gently rub butter into the flour with your fingertips until the mixture appears like fine crumbs. Use your hand to make a well in the center. 3. Add buttermilk and honey into a cup. Mix well till honey is fully dissolved. You may add in more honey if you want your biscuits sweeter. 1 tbsp of honey makes the biscuits slightly sweet, suitable for pairing with your favourite jam. Pour buttermilk and honey mixture into the well. Stir mixture slightly until the dough is just combined and slightly sticky. Do not overmix as it may cause the biscuits to be tough if overhandled. 4. Turn the dough out on a lightly flour surface and gently flatten it to a thickness about 2 cm with your hands. Using a 6cm pastry cutter, cut out as many biscuits as possible. Combine the remaining dough and repeat this step again. 5. Place biscuits on a baking sheet about 3 to 4cm apart. Brush the tops with buttermilk. Bake biscuits for 15 to 20 minutes until well risen and golden brown. Transfer them onto a wire rack to cool. Serve buttermilk biscuits with jam and tea! Enjoy!
