Steps:
- Pan fry red onions in 1 tsp of olive oil for 3 minutes then remove from heat. Place bulgar wheat in saucepan and add stock. Place on medium heat. After 7 minutes add mixed veg and red onions. Cook for further 2 minutes and stir in parsley and olive oil. Cook for a further 6 minutes or until bulgar wheat is soft. Serve immediately.
