Buckle image

I found this recipe in my box and had to share it. A friend in high school's dad used to make this for us for breakfast all the time! It is best served warm! Try with ice cream for a fruity dessert! Peach buckle is my favorite! :-)

Number Of Ingredients 8

2 cup(s) fruit such as peaches, strawberries, or blueberries
1 1/2 cup(s) sugar
2 - eggs
1/2 cup(s) shortening
1/2 cup(s) milk
2 cup(s) flour
2 teaspoon(s) baking powder
1 teaspoon(s) salt

Steps:

  • Mix fruit with 1/2 cup of sugar. Set aside.
  • Cream together remaining sugar, eggs, shortening, and milk.
  • In a separate bowl, sift together flour, baking powder, and salt.
  • Add to egg mixture gradually. Stir in fruit/sugar mix.
  • Bake in greased 9x13 pan at 350 for 30-35 minutes or until toothpick comes out clean.
