Broiled Chicken Thighs with Fresh Plum Sauce image

Great mix of sweet and savory

Number Of Ingredients 10

8 boneless skinless chicken thighs
2 teaspoon(s) each salt, garlic powder & paprika
1 teaspoon(s) black pepper
3 plums pitted and diced
1/2 cup(s) grape juice
1 sprig(s) rosemary
1 teaspoon(s) sugar
2 teaspoon(s) cornstarch
1 tablespoon(s) water
fresh parsley for garnish

Steps:

  • mix the salt, paprika, garlic powder and black pepper together. Sprinkle over both sides of the chicken
  • Place the chicken on a broiler pan and broil on high for about 15 minutes turning half way through.
  • To make the sauce combine the plums, grape juice, rosemary sprig, and sugar in a saucepan. Bring to a boil and cook mashing down the plums until they are real soft and mushy. Strain out the solids in a fine mesh strainer and discard. Mix cornstarch and water together. Bring the sauce to a boil and whisk in the cornstarch mixture until thickened.
  • Serve the sauce with the chicken and garnish with Parsley
