BROCCOLI AND ROASTED WALNUT SOUP image

Number Of Ingredients 9

1 cup walnut halves
2 tbsp grapeseed or rice oil
1/4 cup chopped onion
3 cups organic vegetable broth
1 medium Yukon gold potato, peeled and thinly sliced
1 pound broccoli
1/8 tsp. grated fresh nutmeg
sea salt and freshly ground pepper
1/4 reduced fat sour cream

Steps:

  • 1. Preheat oven to 350, spread walnuts on baking rack. bake until browned 8-10 minutes. Remove and let cool. 2. In large saucepan, heat oil over medium heat. Add onion and saute until sofened, about 1 minute.
