2 c all purpose flour
1/2 lb unsalted butter
1-1/4 c sugar
6 egg yolks

Steps:

  • Sift the flour on a table: make a well in the center. Cut butter into small pieces and put into the center of the well. Gradually add sugar and egg yolks working dough with your hands. Work until smooth. Butter a 9" cake pan. Put the dough in the pan, smoothing with your floured hand. Brush the flattened top of the cake with egg yolk and make a lattice design with the back of a fork. Bake in a preheated 400 degree oven for 15 minutes. Reduce the temperature to 350 degrees and bake 35 minutes more or until done. Let it rest, then unmold on a rack. Serve with assorted fresh berries.
