Bridal Party Chicken Salad image

I love any type of salad in the summer. I found this recipe in our monthly electric company's magazine. I make alot of recipes up they publish, mainly because they are tried and true by a staff at the magazine.

Number Of Ingredients 11

5 c cooked chicken cut into small pieces
2 Tbsp salad oil
2 Tbsp orange juice
2 Tbsp red wine vinegar
1 c cooked rice
1 1/2 c chopped celery
1 c pineapple tidbits, drained
1 can(s) 15 oz mandarin oranges, drained
1/2 c slivered almonds or pecans
1 1/2 c mayonaise
grapes, to your liking

Steps:

  • 1. Combine first 5 ingredients, refrigerate 1 hour
  • 2. Combine chicken mixture with rest of ingredients.
  • 3. Chill well before serving.
  • 4. This recipe makes alot of chicken salad
