A classic chicken salad recipe is always a favorite at a picnic, a barbecue, or an office potluck! Just a few ingredients can be transformed into a cold, creamy salad or filling for a homemade chicken salad sandwich or wrap!

2 cups cooked chicken (chopped)
½ cup mayonnaise
1 stalk celery (chopped)
1 green onion (diced (or chives or red onion))
1 teaspoon dijon mustard
½ teaspoon seasoned salt
pepper to taste
1 teaspoon fresh dill (optional)

Steps:

  • Combine all ingredients in a small bowl and mix well.
  • Season with salt and pepper to taste.
  • Serve as a sandwich or over salad.

A chicken salad with lots of fruit, nuts and a little curry powder. Delicious for any party - great for baby/wedding showers or just for a special lunch. Really good served on croissants.

1 cup mayonnaise
½ cup sour cream
1 teaspoon curry powder
1 small apple, finely chopped
1 tablespoon lemon juice
4 cups cooked chicken breasts, shredded
1 cup chopped celery
1 cup seedless green grapes, halved
½ cup chopped pecans
1 (8 ounce) can crushed pineapple in juice, undrained

Steps:

  • Mix mayonnaise, sour cream, and curry powder in a bowl until smooth.
  • Toss apple and lemon juice in a large bowl. Stir in chicken breast meat, celery, green grapes, pecans, and pineapple. Pour mayonnaise mixture over chicken; toss to combine. Cover and refrigerate until chilled.

CHICKEN AND MUSHROOM WEDDING SALAD



Chicken and Mushroom Wedding Salad image

This chicken and mushroom is unique and really tasty! One of my readers, Ella Z., shared the recipe with us. She called it "Mushroom Wedding Salad" and it was inspired by a recipe from a Sacramento Russian store deli, except much tastier being homemade!

1 lb chicken breast (about 2 medium or 1 large chicken breast)
3/4 lb button mushrooms (cut into large dice)
1 large or 2 small carrots
1 small onion (finely diced (1/2 cup))
1 heaping Tbsp Mayo
5-6 Baby dill pickles (finely diced)
Salt and Pepper to taste

Steps:

  • Season both sides of chicken breast with salt and pepper. Saute over medium heat in 2 Tbsp olive oil until golden brown and cooked through. Let chicken rest on a cutting board at least 10 minutes before cutting into it. It will be so juicy if you wait! Once chicken is cool enough to handle, dice it up. I sliced it in half lengthwise, cut into strips and then diced the strips. Transfer chicken to a medium salad bowl to cool to room temp. Wipe down the skillet with a paper towel.
  • Cut mushrooms into large dice. I used my Vidalia Chop wizard to do this quickly. This by the way is a very handy tool and no one paid me to say that. ;). Saute mushrooms over medium/high heat until all of the water is evaporated then season with salt and pepper to taste. Continue to saute and stir until mushrooms are golden brown - remove mushrooms to the salad bowl to cool. Wipe down the skillet.
  • Grate carrots and finey dice onions. Saute in 2 Tbsp olive oil over medium heat, or until softened and golden. I burned my carrots maybe just a teensy bit. Transfer carrots to salad bowl to let them cool to room temp.
  • Finely dice your baby dills. These add great flavor and crunch to the salad. Don't skip them, k? Add them to the salad bowl.
  • Once all of your ingredients have cooled to room temp, stir in mayo. I used about 2 flat Tbsp of mayo. This salad really doesn't need much mayo. Add it to taste.

1 tablespoon grated onion
1 cup mayonnaise

  • Mix mayonnaise with curry powder and check for taste. Gently mix with all but the nuts. Allow to combine. Sprinkle with nuts and serve on lettuce leaves.

1-1/2 cups dried cranberries
2 celery ribs, finely chopped
2 green onions, thinly sliced

1 heaping tablespoon minced red onion
1 heaping tablespoon minced celery

Dash of hot sauce

2 Tbsp salad oil
2 Tbsp orange juice
2 Tbsp red wine vinegar
1 c cooked rice
1 1/2 c chopped celery
1 c pineapple tidbits, drained
1 can(s) 15 oz mandarin oranges, drained
1/2 c slivered almonds or pecans
1 1/2 c mayonaise
grapes, to your liking

1 1/2 cups Hellmann's mayonnaise
3/4 cup of major grey's chutney (or another brand if you can't find this one)
1 teaspoon curry powder
2 teaspoons lime zest
1/4 cup fresh lime juice
1/2 teaspoon salt
4 cups cooked chicken breasts, small chunked
2 (13 1/4 ounce) cans pineapple chunks, drained
2 cups diagonally sliced celery
1 cup thinly sliced green onion (tops and bottoms)
1/2 cup toasted whole almonds or 1/2 cup sliced blanched almond

Steps:

  • Into a really large mixing bowl, combine the mayonnaise, chutney, curry, lime peel, juice, and salt (if there are fruit chunks in the chutney slice them thin as possible).
  • Blend well then gently fold in remaining ingredients; chill 4 to 6 hours.
  • This can be prepared the night before--just be sure to toss again before serving.

1 pound boneless, skinless chicken breasts (2 to 3), pounded 1/2 inch thick
Kosher salt and freshly ground pepper
2 scallions, thinly sliced
1 celery stalk, finely diced
1 tablespoon chopped fresh tarragon or basil
1/3 cup mayonnaise
8 ounces bacon
4 hot-dog buns, split and toasted
1 avocado, sliced
1 head Little Gem lettuce, leaves separated
1/2 cup cherry tomatoes, sliced
Potato chips, for serving (optional)

Steps:

  • In a large straight-sided skillet, cover chicken with water by 1 inch; season generously with salt. Bring to a simmer over high heat, then reduce heat to medium and simmer until cooked through, about 8 minutes.
  • Transfer chicken to a plate and let cool, then coarsely chop. Combine with scallions, celery, tarragon, and mayonnaise. Season with salt and pepper; set aside.
  • Arrange bacon in a single layer in a large skillet over medium heat. Cook, flipping, until golden and crisp, about 8 minutes. Transfer to a paper towel-lined plate. Top each bun with avocado and lettuce; fill with chicken mixture. Top with bacon and tomatoes and serve with potato chips.
