BREAKFAST QUICHE WITH HASH BROWN CRUST image

Number Of Ingredients 12

3 cups frozen hash browns, thawed (works unthawed as well)
1/2 cup melted butter
nonstick cooking spray
5 eggs (please use cage free)
3/4 cup milk (I used half/half)
1 cup cooked diced ham (the smokier the flavor the better)
1/2 cup diced onion (I used leek)
1 cup grated Swiss cheese
1/4 cup grated cheddar cheese
1/4 cup grated Monterey Jack cheese
2 tsp chopped fresh basil (more is better)
salt and pepper to taste

Steps:

  • 1. Preheat oven to 325 degrees. 2. To prepare the crust, mix the thawed hash browns and butter carefully, making sure the potatoes don't turn to mush. 3. Spray a 9-inch pie plate or quiche pan with nonstick spray. Press the potato-butter mixture evenly on the bottom and sides of the pan. 4. In a large mixing bowl, beat the eggs with an electric mixer for 2 minutes on low speed. Add the milk, ham, onion, Swiss, cheddar, Monterey Jack, basil, and salt and pepper. 5. Pour the egg mixture into the crust, and bake it for 45 minutes. To test whether the quiche is done, insert a knife in the center. If it comes out clean, the quiche is ready.
