Breakfast Loaf image

Number Of Ingredients 12

2 cups flour
1-1/4 cups sugar
2 teaspoons cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup grated coconut (optional)
1/2 cup currants or raisins (optional)
1/2 cup chopped walnuts or pecans (optional)
2 cups grated carrot/zucchini/apples
3/4 cup vegetable oil
3 eggs or egg substitute equivalent
2 teaspoons vanilla

Steps:

  • Preheat oven to 350 degrees.
  • Spray loaf pans with vegetable spray.
  • Mix dry ingredients (flour, sugar, spices, optional ingredients if used).
  • Add grated carrots/zucchini/apple, oil, eggs, vanilla to dry ingredients and mix well.
  • Pour batter into loaf pans.
  • Bake 1 hour or until loaf is dry in middle and shrinking from sides of pan.
