This is a fun and yummy breakfast that's great for a snack or dessert as well!

1 apple, cored and chopped
½ cup crispy rice cereal squares (such as Rice Chex®), crushed
2 teaspoons ground cinnamon
2 teaspoons coconut oil
½ cup sliced fresh strawberries
¼ cup chopped walnuts

Steps:

  • Place the apple, rice cereal, cinnamon, and coconut oil into a microwave-safe bowl.
  • Cook in a microwave oven until the coconut oil has melted, 30 to 45 seconds. Stir to combine.
  • Serve topped with berries and walnuts, if desired.
