Bread Pudding image

Since it's just my husband and I, we can't eat an entire loaf of French bread before it goes bad. This is my go-to so that I can use it up rather than throw it away.

1 loaf day-old french bread
2 1/2 c heavy cream
1 1/2 c milk
3 large eggs
2 c white sugar
2 Tbsp vanilla extract
3 Tbsp butter, softened
pinch salt
1/2 c raisins (optional)
1 tsp cinnamon (optional)

Steps:

  • 1. Preheat oven to 350^. Grease an 8" baking pan, or spray with non-stick cooking spray.
  • 2. Break or cut bread into 1" pieces and put into prepared baking pan. If using, sprinkle with raisins.
  • 3. In a medium bowl, add cream, milk, and eggs. Whisk until blended. Add sugar, vanilla, and cinnamon (if using) and stir until well mixed.
  • 4. Pour wet ingredients over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture. Dot with butter.
  • 5. Place pan with pudding in a larger pan; fill larger pan with water until it is 1" deep. Bake for 45 minutes or until top springs back when lightly tapped. Serve warm with vanilla or bourbon sauce.
