Steps:
- Heat a Dutch Oven to Medium heat. Season the chicken with salt and pepper and sear it in the olive oil until well browned on all sides. Remove chicken and set aside.
- Add the onions, mushrooms and garlic and sauté for 2-3 minutes. Add the white wine and reduce by half. Place all of the remaining ingredients in the pot including the chicken and bring to a simmer.
- Cover and place in a preheated oven at 325 degrees Fahrenheit for 40 minutes. Strain out the liquid and reduce the liquid by half, season with salt and pepper, and thicken if desired.
- Serve immediately with your favorite vegetables and starch. If you would prefer a one-pot meal try adding 1 cup of rice to the above recipe before you bring it to a simmer.
