Braised Artichokes image

Number Of Ingredients 8

1 small onion, finely chopped
1/4 cup olive oil
1 clove garlic, finely chopped
2 tablespoons chopped fresh flat-leaf parsley
2 pounds baby fresh artichokes, trimmed and cut into quarters
To prepare artichokes, see INFORMATION AND SPECIAL TECHNIQUES:
1/2 cup water
salt and freshly ground black pepper

Steps:

  • 1 In a large saucepan, cook the onion in the oil over medium heat until tender, about 10 minutes. Stir in the garlic and parsley. 2 Place the artichokes in the pan and stir well. Add the water and salt and pepper to taste. Cover and cook over low heat until the artichokes are tender when pierced with a knife, about 15 minutes. Serve warm or at room temperature.
