BOW-TIE FRESH TOMATO SAUCE image

3 ripe plum toms
peeled - 6 ripe toms
peeled & seeded - 3 tbl olive oil - 4 cloves garlic thinly sliced - 1 tsp salt - 2 tsp sugar - 3 fresh basil leaves
torn - 12 oz farfalle pasta cooked - grated parm cheese

Steps:

  • smash toms in bowl c back of lg spoon - reserve - heat olive oil in skillet - add garlic & salt - cook until garlic turns golden brown - stir in sugar - stir in reserved tomato mix & basil - cook until sauce thickens, about 20-30 mins - stir occasionally - toss pasta & sauce in bowl - serve c grated cheese
