Bourbon Street Chicken image

I found this recipe on Bigoven.com via Pinterest & it is AWESOME. It's pretty quick & easy too. It's like teriyaki chicken, but different & my family thinks it's even better. I serve this over brown rice & sometimes add some peas to the rice. I also double the sauce, as we like lots of sauce for the rice, but you have to be really careful because too much sauce is over powering in flavor. You have to put just enough to coat the rice lightly.

Number Of Ingredients 12

3 pound(s) boneless chicken breast, cut into bite-sized pieces
2 tablespoon(s) olive oil
2 - garlic cloves, crushed
1/2 teaspoon(s) ginger
2 tablespoon(s) cornstarch
1 teaspoon(s) red pepper flakes
1/2 cup(s) apple juice
4 tablespoon(s) ketchup
2/3 cup(s) light brown sugar
2 tablespoon(s) apple cider vinegar
2/3 cup(s) soy sauce
1 cup(s) water

Steps:

  • Heat oil in skillet & add chicken. Cook over medium heat until browned. Remove chicken from skillet & add remaining ingredients, heating over medium heat until well blended & dissolved. Add chicken back to skillet & bring to a hard boil until sauce is thickened. Serve over rice.
