Steps:
- Peel and dice potatoes. Put potatoes into pot. Fill pot up until it has covered all of the potatoes (no more, no less). Add olive oil, salt, pepper, and parsley. Once it boils, let it sit for 5-10 minutes Drain potatoes and put into mixer with the whisk attachment. Add butter and whip at highest speed. (But be sure that it doesn't go flying everywhere!) Add milk. Mix. Add salt and pepper. Mix. Add parsley. Mix. Serve with gravy! YUM!
