Steps:
- Add apple cider vinegar to the warm milk and leave to curdle.
- In a small bowl, mix flaxseed with water and set aside for 5 mins.
- In a large bowl, add flour, baking powder, salt & sugar. Mix to combine
- Add milk, flax egg, melted butter & vanilla. Stir until just combined. Don't overmix.
- Turn on the waffle iron. Spray with oil. Add 1 ladle of waffle batter. Cook for 10 minutes or until golden brown. Repeat until you have used up all the batter. You can leave the waffles in a warm oven whilst you make the rest. You can also freeze any leftover waffles.
- Serve on a platter with berries, banana, avocado, maple syrup, bacon, mint, chocolate sauce, peanut butter and whatever you like to serve yourselves!
