BONNIE'S DELICIOUS APPLE COBBLER image

This recipe is absolutely delicious. This Granny Smith apple cobbler is made with cinnamon, Mexican vanilla and a hint of nutmeg. The perfect dessert for your fall dinner. Enjoy! Photo is my own and recipe is from a southern food magazine.

- pie filling:
5 - cups tart apples, like granny smith, peeled and sliced
3/4 - cup of sugar
2 - tablespoons flour
1/2 - teaspoon cinnamon
1/4 - teaspoon nutmeg
1/4 - teaspoon salt
1 - teaspoon mexican vanilla
1/4 - cup of water
1 - tablespoon butter softened

- topping:
1/2 - cup flour, sifted
1/2 - cup sugar
1/2 - teaspoon baking powder
1/4 - teaspoon salt
2 - tablespoons butter, softened
1 - egg slightly beaten

Steps:

  • In a medium bowl, combine sliced apples, 3/4 cup sugar, 2 tablespoons flour, cinnamon, nutmeg salt, vanilla and water.
  • Preheat oven to 375 degrees. Turn the mixture into a lightly buttered 9 inch square pan. Dot apples with 1 tablespoon butter.
  • Now make the topping. Combine all topping ingredients in a small bowl. Beat with a wooden spoon until batter is smooth. Drop the batter in 9 equal portions, starting with the corners first. Batter will spread during baking.
  • Bake 35 to 40 minutes at 375 degrees or until apples are tender and crust is a golden brown. Serve warm with cream or ice cream. Enjoy!
  • Cook's Tip: About the sugar. I like it with 1/2 cup sugar; my husband likes 3/4 cup sugar. Best way to decide how much sugar suits your taste is to mix the pie filling and add the sugar 1/2 cup at a time until it tastes right to you. I have made it with 1/2 Splenda.
