Steps:
- Toast peanuts at 350* for 20-25 minutes. Grind in a food processor until smooth. Measure 1 cup peanut butter into blender. Beat in vanilla extract and salt until well mixed
- Bring sugar and water to a boil until 248*. Slow stream sugar syrup into peanut butter. Beat until cool.
- Turn peanut butter mixture onto parchment paper. Cool slightly. Roll out between parchment paper to ¼" thickness. Cover and let set until completely cooled.
- Cut out circle(s) slightly smaller than pan. Freeze until ready to use
- Fill pan with melted chocolate. Tap to smooth. Press frozen peanut butter disk into chocolate, pushing it up the sides Pour/Pipe melted chocolate over the top and tap to smooth and remove bubbles.
- Chill until set.
