BOBBY FLAY'S TWICE-BAKED POTATOES WITH SMOKED CHILIES image

6 medium russet potatoes, scrubbed and dried
1/2 pound soft goat cheese
1/2 cup thin-sliced scallions
2 tablespoons pureed canned chipotles
3/4 cup milk
2 tablespoons unsalted butter
Salt and fresh-ground black pepper, to taste

Steps:

  • Preheat oven to 350 degrees. Bake potatoes for 1 hour, or until soft. Let potatoes cool slightly. When cool enough to handle, cut potatoes in half lengthwise and scoop out flesh, leaving shells whole. Reserve shells. Mash potato flesh with goat cheese, scallions and chipotle puree. Heat milk and butter in small saucepan over medium heat, and then beat into potato mixture. Season with salt and pepper, and stuff mixture into the reserved shells. When ready to serve, preheat oven to 400 degrees. Place stuffed potatoes on baking sheet, and bake for 5 minutes, or until hot.
